Healthy Granola Recipe

This has been a favorite of mine since hitting the road. It’s easy to make, tastes good and is good for you.

Basic Recipe:

4 cups whole rolled oats

1 cup slice almonds

1 cup chopped walnuts or pecans

1 cup shredded coconut

2 cups chopped dried fruit or raisins

1/2 cup olive oil

1/3 cup honey

Heat oven to 325 degrees. Mix oats, nuts, coconut together and spread in a roasting pan or cookie sheet with an lip. Heat olive oil and honey till thin enough to pour; drizzle over mixture in pan; stir until well coated. Bake for 45 – 60 minutes until browned, stirring every 15 minutes. Add dried fruit after slightly cooled. Store in plastic bags or containers.

I usually eat this combined with plain yogurt and seasonal fruit – such as strawberries, peaches or blueberries. It tastes great and gives me that full feeling all the way to lunch.

This is an easy recipe to play around with and make it your own. You can add sesame seeds, sunflower, pumpkin or flax seed or whatever. Seems I never make it the same way twice. I hope you enjoy it as much as I do!

  1. Hey thanks Kim, I’ve been meaning to attempt to make some in our RV oven. I’m that it will make a mess though, our oven is so small. We used to make tons of it at a time in our old stick house’s oven, but haven’t since we hit the road.

    How much hassle is it to make it in an RV?

    I don’t find it much of a hassle. It is tough making it when it’s warm outside. It’s nice when it’s cold because the overn heats the RV. I don’t really have the right kind of pan. I make it in a 9 x 12 cookie sheet that has about a 1/2 inch lip on it. It makes it kind of hard to stir but it’s possible. It really hasn’t been a mess.
